Menu Planning Monday

Sorry about the blogging break- it's been a crazy week, but basketball is over!  I have lots of fun stuff planned for the blog, so stay tuned!
Here is my menu plan for the week:

Sunday:  Tacos at the super bowl party.
Monday:  Chili with baked potatoes,
Tuesday:  Spring creek BBQ thanks to freebie coupons :)
Wednesday:  Mini Turkey Meatloafs, veggies, baked potato
Thursday:  Subway (school night) or perhaps a costco meal :)
Friday:  Chicken crockpot fajitas:  marinate chicken in diced tomatoes, cook in crockpot with bell pepper/onion. 

I managed to make all my meals on Sunday and everything is in the freezer.  It required a little work, but man, what a great feeling!  Let me know what your planning on this week, I hope it's more exciting than mine!

Menu Planning Monday

I know this is a little late, but I was super sick yesterday, so here's my menu for the week.

Sunday:  Spaghetti
Monday: Beef/Rotel/Beans burritos/ salsa and smart pops
Tuesday:  Grilled chicken wraps in fat free tortillas, steamed veggies
Wednesday:  Chicken StirFry (recipe from biggest loser)
Thursday:  Subway-Justin has class :(
Friday:  Turkey Burgers with steamed veggies.

Favorite Recipe Friday!

Welcome to the first edition of Favorite Recipe Friday!  I thought each Friday we could perhaps share recipes if you have time and have a theme of the week.  This week let's do desserts, because, lets' face it, I love desserts :)

My dessert I am sharing this week is a weight watchers recipe.  It is low points, easy and oh, so good.

All you need is a box mix of angel food cake and any light pie filling, whatever fruit you like.  Mix together, add no water, just cake mix and pie filling.  Mix until both ingredients are blended well, pour into a 8x8 pan.  Bake as directed on the cake package, or until a toothpick comes out clean.  Tada, great dessert!  I've even made it into a small pan and it was similar to bars and each piece has a points value of around 2-3, depending on the filling.  Compare that to a regular cake, where one piece has around 12!  Eeek!  (though I do love cake)  Please comment and leave your favorite recipe for us all to drool over!  Have a great friday ladies!

Menu Planning Monday

Happy Monday!  No school for me today, yippee!  I thought I would take the time to share something I have used to help my life in the kitchen much easier.  In my endless internet surfing, I came upon the blog http://www.orgjunkie.com/.  On Mondays she posts Menu Planning Monday and literally hundreds, if not thousands of people list their menus and most of their recipes.  It's great to get a quick idea or recipe or just be nosy and see what the rest of the world does.  There are even some great links that are vegetarian or gluten free or other special dietary restrictions.  Here is my menu plan and it's a little boring this week, but I am anticipating being very swamped at work and this is the week Justin goes back to school.  (although, the only thing he is allowed to do is brown the ground beef).  If you menu plan, please feel free to post your menus/recipes to share in the comments section.

Monday:  Grilled Chicken, Frozen veggies in a bag (need a low points meal to make up for Olive Garden last night)



Dessert: yogurt/blackberries


Tuesday:


Zucchini Beef: Ground lean beef cooked with diced zucchini, garlic powder and rotel tomatoes. We eat it with a tortilla and it's great.


Wednesday:


Weight Watchers taco soup


Thursday:


Grilled salmon with new potatoes. I just bake mine in the oven with some lemon and pepper, not too bad.




Friday:


Night out (subway after my game)

Breakfasts:  Homemade egg mcmuffins Lunches:  Smart ones /with yogurt.
